What are FIVE things we should now about Chad Mitchell?
1. I originally studied Hotel and Restaurant Management but soon after graduating realized that my true passion is in the culinary arts. I pursued a career in Culinary Management and followed that up by working in larger hotels and restaurants as an intern and apprentice.

2. Working for Fairmont Hotels and Resorts in Canada I had opportunities to work in all types of outlets and restaurants from four diamond dining establishments to large banquets and butchery, which helped me build my passion and understanding of food and wine.

3. I love to dine out and really enjoy the food experience as a whole from good wine to local produce, seafood, and game, as well as the interaction between people while dining. It’s a great way to keep up with local and foreign food trends as the food and beverage field is forever changing.

RED Steakhouse & Bar has an excellent wine list. Boasting over 20 wines by the glass, Sommelier Stefan Gitschner of Gosling’s is particularly proud of the lineup. As he should be!

This relatively new restaurant – it opened not two years ago – showcases an eclectic and well-chosen selection of quality producers and “boutique” wines and holds two Wine Spectator ‘Awards of Excellence,’ one for each year in business.

They celebrated these accolades with a special wine tasting evening, a shining example of one of the restaurant’s many tipple-centric events. Oenophiles gathered, sharing their knowledge and grape-fueled opinions over carefully created amuse-bouches to pair with the featured wines. It followed a straightforward formula; five wines were selected, starting with two white, then two red, followed by a dessert wine. We were invited to top up on our favourites, pass on our least preferred, and then have our minds changed as quickly as they were made. Such is the power of a successful marriage of flavours.

Last night [Nov 15] Red Steakhouse & Bar — Bermuda’s newest restaurant and lounge — held a grand opening at its Front Street location.

Designed by internationally acclaimed architect Jason Jones, guests will be welcomed to an “old world charm, meets new world dining” atmosphere. Red’s dining options include the classic Steakhouse dining room, the vibrant and chic lounge, VIP balcony seating and the contemporary outdoor patio.

Red Steakhouse & Bar offers a selection of Certified Angus Beef cuts which feature Filet Mignon, Strip, Rib eye, Porterhouse and Cowboy. Other dishes will include organic chicken, lamb, veal, local lobster and seafood as well as unique vegetarian options.

Red Steakhouse & Bar’s team of seasoned hospitality professionals are committed to providing an exceptional dining experience. Owners David Madeiros and Rick Olson have over 50 years of combined experience and knowledge in the hospitality industry, both locally and internationally.

Bermuda’s newest upscale restaurant, Red Steakhouse and Bar, celebrated its grand opening last night.

Red has been open quietly for a week and owners David Madeiros and Rick Olson said yesterday “it’s gotten busier and busier” and they’ve already had some repeat customers.

“We are very happy with the response so far,” Mr Olson said. “Customers are complimenting us on the food and the quality of our steaks. That’s good to hear in the first week.”

They plan to start opening for lunch hopefully next week, he said.

Red is in the former Silk restaurant space and Mr Olson said despite the economy he believes there is still a market for a high-end cocktail bar and dining option.

The Bermuda Bistro at the Beach owner Rick Olson is going upscale with his latest venture.

He and partner David Madeiros are also going where few dare to go in these tough economic times, by opening up a new restaurant.

Red Steakhouse & Bar at 55 Front Street is expected to open this month and has already booked a number of office Christmas parties.

The restaurant’s mixed modern-classic style interior was designed by Jason Jones and features a plush, private dining area, bar and lounge, and dining area overlooking Hamilton Harbour. Mr Jones has painted a striking marine-inspired mural on the entrance wall.

The menu focuses on steak and seafood, Mr Olson said yesterday.

He and Mr Madeiros expect the restaurant will provide jobs for up to 15 Bermudians.
